Chicken Tacos with Avocado Salsa

Preparing menu for loved ones with health issues could be a problem, but not anymore with this recipe. These chicken tacos are loaded with natural seasonings and served with salsa consisting of avocado, corn, lime juice and cherry tomatoes.

Servings: 4 (8 tacos)

Ingredients

1 teaspoon sugar

1 pound boneless & skinless chicken breasts

1/3 cup water

1 teaspoon onion powder

1 tablespoon chili powder

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1 teaspoon dried oregano

1/2 teaspoon salt

1 teaspoon paprika

1 cup fresh or frozen thawed corn

1 medium peeled and cubed ripe avocado

2 teaspoons lime juice

1 cup quartered cherry tomatoes

8 warmed taco shells

Directions

Cut chicken breasts into ½-inch strips.

Brown the chicken in a greased large nonstick pan on medium high heat.

Add the seasonings, sugar and water to chicken; cook for four to five minutes. Stir often until the chicken is golden brown.

Combine in a small bowl the lime juice, tomatoes, corn and avocado, tossing to coat well.

Fill taco shells with chicken mixture and spread on top with avocado salsa.

Serve!
